Bollinger Vieilles Vignes Françaises 20062006 produced exceptional Pinot Noir for Bollinger, sourced from Chaudes Terres and Clos St Jacques, the two vineyards in Champagne that survived phylloxera and are still on their original rootstocks. This special wine was aged in the cellar for more than twice the amount of time called for by appellation rules and given zero dosage. From the winery: "Deep gold. The colour of a bright autumn morning. Very intense, characteristic of mature vintages. Quince, honey, dried apricots and candied fruits flavours. Tertiary aromas of grilled, toasted bread. A round, creamy mouthfeel with an effervescence that melts into the wine. A saline, mineral finish. Incredible length with exceptional richness and maturity."
